Miles E. Clack is the Executive Chef and visionary behind Indigo Catering. His love for food began in the kitchen with his family—sharing his grandmother’s Sunday breakfasts and butter biscuits, and learning the magic of holiday meals alongside his mother. Those early memories ignited a lifelong passion for creating meals that bring people together.
At Weaver Academy of Culinary Arts, Miles sharpened his skills and developed his craft, later gaining over 17 years of experience in catering. Under the mentorship of esteemed chefs George Neal, Nick Watts, James Ingold, Harrison Simpson, and Adam Donahue at 1618, he grew into the chef he is today: one who values integrity, perseverance, and excellence in every dish.
Indigo Catering was born out of Miles’ dream of business ownership and a desire to transform meals into unforgettable experiences. The company’s very first event—a 100-person wedding 500 miles from home under extreme circumstances—set the tone for what Indigo stands for: calm under pressure, creativity, and impeccable service.
Miles describes his culinary style as rooted in Southern traditions yet infused with imagination and depth—just like the color indigo itself. Through Indigo Catering, he strives to create not just meals, but experiences that stay with people long after the last bite. Whether it’s a boxed lunch, in-home dining, or a 200-guest celebration, Miles’ mission is to share his love for the craft and serve with hospitality that lasts a lifetime.
